This has become a favorite way for me to make a whole chicken. It cooks up so nice with little effort.
- 1 whole roasting chicken
- 1 small white onion
- 4 peeled whole garlic cloves
- 3 ribs of celery, cut into large pieces
- 3 large carrots, peeled, cut into large pieces
- 2 tbsp olive oil
- salt and pepper to taste and your favorite herbs
The chicken will be savory and tender, and if you want you can use
the leftover juices to make gravy. Just pour it into a saucepan, add a
roux, bring to a boil, and YUM! Gravy.
For a Mexican Flavor to use in soft tacos omit carrots, celery, salt and pepper, and add your favorite taco season and squeez half of a fresh lime over the top.
